Good Morning Granola

Mix together:
6 1/2 cups rolled oats
1 cup wheat germ
1/2 cup flax meal

Add:
1/2 cup coconut oil
1 tsp. vanilla

Heat and add 1 cup honey

Add:
2 tsp cinnamon
1 tsp salt

Mix well.

Bake on baking sheets (I use 2- 13x9 pyrex dishes) at 200 degrees for 1 hour, stirring every 15 mins. I usually end up cooking it an additional 15-30 minutes to make for a more "crunchy" granola.

Pour into a large bowl and add dried cranberries and sunflower seeds. (Other options are raisins, nuts, pumpkin seeds, etc.)

I will have to try that! My mother loves granola snacks! And we are always in search of frugal, yet healthy food.
