Baking Day

Since finding out a few weeks ago that I can't have any wheat, (that's a story for another post...) I slacked out some in the baking department. But this morning I decided to get things back on track for all the people in the family who can still partake of the goodness! 

We were fairly fruitful... we made 4 loaves of Elsie's Homemade Bread , using all whole wheat. (Unfortunately, I let it rise a little too long and it fell some while baking. So it doesn't look too great... but thankfully it's still fluffy!)




We also made 2 dozen banana nut muffins.  I just used the recipe in my Southern Living cookbook; substituting whole wheat flour for regular flour, turbinado sugar for the white sugar, and added some cinnamon and nutmeg. The kids seemed to really enjoy them at lunch... so I guess the substitutions were acceptable.


Anyone have any good wheat-free, yeast-free, spelt-free recipes they could share? The $5.99 tiny loaf of Millet Flax bread at Whole Foods doesn't exactly fit into my food budget...

When I finally went to pull pictures off my camera, I found some that Stephanie took of Isaac and I the night we went to dinner to celebrate our anniversary. Have I mentioned how much I LOVE having a sister who has a gift for photography??

I'm yeast and sugar free but not wheat free but I did find a good yeast-free bread online that you might be able to use gluten-free flour in. I'll see if I can find it again and pop back here to leave the link otherwise I'll type it up and email it to you.

Okay, I couldn't find the exact recipe but this one looks interesting:

And this one:

Gluten-free bread

1 cup of cornflour, fine
½ cup of grated carrot
½ cup of rice/soy/almond milk
1 tsp gluten free baking powder
2 tbsp olive oil
You may include dried tomato or olives if wanted

Mix dry ingredients then add wet ingredients and bake for 30-40 minutes at 180C.

I've not tried either but I've found with these type of breads you can experiment without doing any harm. They're not usually as light as ordinary breads but they do make great toast. I think you would call them a 'biscuit bread' in the States whereas we refer to them to as 'scone bread' or 'damper'.

This one you might be able to substitute gluten-free flour:

I think the key is be willing to experiment. When I make a loaf for myself I slice it and freeze it so that I always have some on hand. My family like my bread too so it's also a good back-up for when I'm out of their bread.

Hey Christie,

I've been reading your blog for many months now, but haven't commented before. Your posts are always so encouraging!

Back in March I found out I'm allergic to gluten and dairy. I have severe stomach issues when I consume it. I love to bake, and I stopped baking after I found out the test results, because I thought I couldn't bake anything anymore! But I've found using White & Brown Rice flours, and Sorghum flour, among others, make really good baked goods.

Anyways, I just started a blog where I'm posting gluten & dairy free recipes. http://CookGlutenFree.blogspot.com.

The chocolate chip cookie recipe is super easy, and very good! I prefer them over the gluten kind. :)

Hope you're starting to feel better! And I'll be praying for you. It's so hard at first to cut it out, the cravings for it are horrible! But, I hope it gets easier for you. It has for me; just takes time.

Natalie, what a great blog you have! I will DEFINITELY be frequenting it! I have past experiences with substituting spelt for wheat, but since I can't have spelt either.... can brown rice flour be substituted just as easily for wheat? This is going to be a learning experience for sure... *grin*

Thanks for your sweet comments! I'm feeling really great now... I'm right at about 16 weeks, so I'm in the "fun" stage of pregnancy (as you well know!) A big congratulations to Ashlyn on her recent EI graduation... she looked lovely in all the pictures Stephanie took at EI!

Boy do I miss you!! Let me know when you're back in town and stuff's settled down and I'll come visit you. The no wheat thing is for... I'm not sure how long. :) I finally went to that nutritionist that my mom and sister have been seeing, and she ran all sorts of tests on me. Long story short, I have major Candida, and some fungus (yes, I know, gross) in my blood that's causing me not to tolerate certain foods. So I have a nice little list of foods I have to avoid, one of which is wheat. It will just depend on how my body reacts to wheat once we get my blood all cleaned up! :)
